Élodie's Story

Élodie has been a professional pastry chef since she was 16. Trained as an apprentice with a Compagnon du Devoir, she quickly developed a strong demand for precision in technique, taste, and artisanal rigor.

Today, she has over 20 years of experience in professional pastry making.

In 2015, Élodie chose to specialize in gluten-free and allergen-free pastries, convinced that gastronomic excellence and food safety can — and must — go hand in hand.

She then trained with recognized experts, particularly at the Alain Ducasse and Thuriès National Higher School of Pastry, to deepen her knowledge of gluten-free specific techniques.

This expertise naturally led her to become, in turn, a leading trainer in gluten-free and allergen-free pastry.
